Rodrigo Zucchi learned Neapolitan pizza in Miami under Carmine Candito, who took the world title in 2022, and runs this with his wife Vanessa — a Stefano Ferrara brick oven firing each pie for 60 to 90 seconds at 850 degrees. Get a margherita and eat it standing up.
Cane sugar syrups, never corn syrup, in flavors that actually grow here. Gecko Girlz has been at this since 1997 on the Big Island and brought it to Diamond Head Center — lilikoi, lychee and mango over shave ice, with a coconut-based snow cap for anyone off dairy. Add azuki beans and mochi.
Thirty-odd years of shave ice, and the only counter on the island making it for diabetics. Baldwin's is a mom-and-pop in Waimalu Shopping Center — ube and blue Hawaii over fluffy ice, sugar-free syrups and ice cream for anyone who needs them — with shelves of crack seed behind. Add mochi balls and azuki beans.
Around twenty kinds of truffle a day, all made by hand from a family recipe. Erin runs it with her uncle Colins Kawai — they met at a wedding expo and worked out they were related — and after four years without a storefront the shop landed in Manoa Square. Try whatever lilikoi truffle is in the case that day.
A windward kitchen that turns taro, ulu and moringa into fresh pasta by hand. Everything is made to order and takes 30 to 40 minutes — which is how a Kaneohe strip-mall counter landed on Yelp's national Top 100 two years running. Order the taro pasta with shrimp and luau leaves in coconut cream.
Fresh-cut poke in the back of Manoa — find it, and you'll keep going back. The fish is local, the portions are honest, and the price is fair.
Shave ice with mochi made the same morning. This Kapolei shop churns its own ice cream — ube, haupia, chocolate macadamia — and rolls mochi daily in strawberry cream, peanut butter chocolate and ube to go on top. Add the mochi to the shave ice; that is the whole trick.
A Chinatown bakery with forty years behind it before the current owners arrived. Wesley and Jie Mei Fang came from Guangdong and took it over in 2008, keeping the har gow and manapua in-house on family recipes while adding mochi mooncakes and crack seed. Try the half moon — the one most visitors walk straight past.
Maui's most decorated shave ice, brought over to Kapahulu. David and Ululani Yamashiro opened a 65-square-foot stand in Lahaina in 2008 and had to double it within three months; this is the brand's first Oahu shop. Ask for a snow cap and ice cream underneath.
The boba shop that went sideways into rice yogurt. Cowcow's claims the first purple rice and yogurt drinks in Hawaii, and the rice gives them a texture nothing else on Waialae has; the room is bright pink with a rose wall and a plushy lounge. Try the taro purple rice yogurt.
Fresh, thoughtfully-built sandwiches in Kaimuki. A go-to lunch spot for the neighborhood — nothing fancy, just done really well.
Downtown poke done right. Simple setup, generous portions, and the kind of fresh ahi that makes you understand why Hawaii is obsessed.
A small-batch creamery started in a pandemic and named for a brother. Zachary Villanueva lost hours in spring 2020 and began churning ice cream named for Daniel, the brother he lost to blood cancer in 2018; he and Courtney now build it on organic dairy with Laie vanilla, Manoa chocolate and Manoa kiawe honey. Try whichever flavor is running on the local honey.
Kaimuki's matcha haven. Every drink is made with care, the aesthetic is minimal and calming, and the matcha quality is legitimately exceptional.
Island Snow made its name in Kailua, where the Obama family's shave ice runs turned into national news and the shop's Snowbama took the president's name. This is the Waikiki counter — same finely shaved ice, a block off the sand. Grab one on the way to the beach, not after.
The bakery that turned a Portuguese Shrove Tuesday tradition into a Hawaii institution. The Rego family opened on Kapahulu in 1952 and started frying malasadas the year after at the suggestion of Leonard's mother — no hole, chewier than a doughnut, sugar while still hot. Get them straight from the counter.
The fish taco that anchors Monsarrat Avenue. The place opened in 2004 and Bruce Bryant — Oahu-raised, Kamehameha graduate, lifelong surfer — took it over three years later and has run it with Jenn since, two blocks off Kapiolani Park and four below the Diamond Head trailhead. Get the fish tacos and eat them in the park.
